I am looking to do some minimal performance upgrades and would like some feedback on pros/cons/whatnot from experts or someone who has actually used the products.

Looking to install the following:

V&H Big Shots Staggered for Dyna
Arlen Ness "Big Sucker"
Dynojet jet kit

and for the motor...

Andrews TW21 cams w/ adjustable pushrods
Iridium spark plugs
8.5mm plug wires
Dyna 2000TC ignition

All else will remain stock. The goal is to help the stock motor reach as much of its full potential as possible w/o doing alot of major modifications, still maintaining its fun ride-ablility, and not kill engine life (basically, want to help it run better and stronger).

Any thoughts on the configuration I'm considering?

Any help is GREATLY appreciated!!!!

Sounds like you're on the right track, but personally I wouldn't spend a penny on an Arlen Ness part.
