why do the modern bikes start in
gear mode

Because they have what is called primary kick starting, in other words the kick starter is geared right to the crankshaft of the engine, usually by an over-running pawl mechanism. This allows you to leave the bike in gear, pull in the clutch, and kick start it. It saves you from hunting for neutral.
