I am in he process of purchasing a set of 2" Cobra Drag Pipes for my 07 Shadow Aero. Is it necessary to rejet the carb?

Depending upon where you live, while it may not be an absolute "necessity" to re-jet the carb, you will most likely experience a better running and healthier (less lean) engine if you do. Without sacrificing the maintenance-free operation of your bike, if you also add to your pipes and re-jetted carb a more beneficial free-flowing air box, you'll be surprised at the performance you will gain by doing so...perhaps 15%, or more. There is much to gain while nothing at all to lose. Well, the one thing it may lessen a little is your gas mileage IF you can't prevent your right wrist from taking advantage of the added performance you'll have. Also, you may want to visit www.customcycle.com, or even call Shane and ask him some questions about new pipes, etc. He's an amazing guy, offers a wealth of knowledge, sells lots of accessories (including pipes), etc. Take care. : )
