If you don't have any experience riding motorcycles (i.e. never ridden, or only ridden in the MSF class) I'd say don't get a bike that is too tall for you. By too tall, I mean any bike that you can't have your feet flat on the ground when your on it. This doesn't mean completely that the cb750 is not for you. There is always the option of lowering the bike (I believe by lowering the shocks), but you would need to look into this more.

when i first started riding 5 years, i learned on a 79 yamaha xs 1100, heavy as an ox. i am the same build as you. i could bearly touch the ground, i always got stopped on bridges and hills, and has few problems. however during long stops, over 10 min., my calves and feet got a little sore. i would recommed a SHORTER bike if you are just starting out. good luck.

You should have no trouble at all, I have a Nighthawk 750, it is light and agile for a 750 cc motorcycle. The power will not be too much to handle, and you can always get the bike lowered with shorter springs if you need to.
