Has anyone run regular gas in there Sabre? I was told to use premium fuel, but the book states that it can use 86 octane

My car has 10.5/1 compression and regular is recommended for it. Sabre has 8.0/1 so regular is appropriate.

I run both 86 and 89 in my 2005 Shadow Sabre. I don't see any difference - but the bike has been good to me so 89 proof gasoline is good piece of mind - this is only my opinion though.

I use 87 octane and it runs great. Not sure that a higher octane would be could combust properly.

Simple: The danger of low octance is "pinging" or pre-ignition and this is audible. Try it with the different octanes available and see how it runs. If you get pinging on accelerating or climbing, or sluggish performance, increase the octane. Also test at low rpms and high load, as coming out of idle and accelerating, especially up a hill (this is the worst circumstance for causing pinging). Occasional pinging or under extreme conditions like the test case above, will not hurt anything. But if it is fairly common and constant, it can eventually blow a hole in the top of the piston.
