Dan,
I have a 02 sabre and I made some mods to original baffles and I had to make a mixture adjustment on mine, the mixture setting from the factory is very lean and I currently am putting on a set of vance and hines and I ordered the jet kit also. You will probably notice some popping when you let off of the throttle which is caused by to lean of a mixture. You will probably have to main jet and needle it to have the proper mixture through all of the ranges of throttle and make an adjustment on the mixture screw. I would rather have it running a little richer than leaner because you can do damage in a lean condition. So with all of that said I would suggest jetting it, knowing how much it changed mine by just putching the baffles.
